Cucumber & Honeydew Salad

We made this recipe the first time with Brats with a Cucumber/Blueberry and needed a dish to use up the rest of the cucumber. It has been a huge hit! (adapted from the June ’13 BHG)
2 TBS fresh squeezed Lemon Juice

1/4 cup EVOO

1 TSP Honey – but I added more, because well, can you blame me??

Black Pepper to taste

a Sprinkling of Celery Seed (how is THAT for an accurate measurement!?)

Red Onion


Feta Cheese

I really gave up on the measurements there at the end. No worries, just chop and compile and voila! It’s so delicious!
